Observed improper cooling methods are being utilized for Time/Temperature Control for Safety (TCS) foods. Ensure that all TCS food are stored in cold wells in preop top coolers or cooling units when not in use.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observing wiping towel buckets with sanitizer are stored directly next to open bag of onions and containers of sauce.
