6-1C - proper cooling time and temperature
Regulation: 511-6-1.04(6)(d) - cooling (p)
Sausage and kale soup in WIC found with date mark 9/30/25. Found "cooling" but still at 48F. Explained to kitchen employee that soup was improperly cooled (sealed lid) and therefore did not get to a temperature of 41F in the proper amount of time. Kitchen employee removed soup from WIC and discarded.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Boxes in WIF and dry storage observed on the floor not 6 inches off the floor. Frozen food also observed on the floor in WIF. PIC advised to keep all items 6 inches off floor.
