1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
Observed facility does not have a Certified Food Safety Manager (CFSM) on staff. CA: Food service establishments must employ at least one Certified Food Safety Manager to ensure food safety is being properly managed during all hours of operation. PIC instructed to obtain CFSM certification as soon as possible. Follow-up inspection will be conducted within 72 hours business hours to verify compliance.
6-2 - proper date marking and disposition

Observed milk and another dairy product stored in the reach-in cooler outside of their original containers without a date mark. Additionally, multiple food items in the reach-in cooler were observed with more than one date mark present, creating confusion about the correct discard date. CA: Refrigerated ready-to-eat TCS foods held more than 24 hours must be clearly date marked and discarded within 7 days when held at 41°F or below. Foods removed from their original containers must also be properly date marked, and only one clear date mark should be present to indicate the correct discard date. Proper date marking helps ensure foods are used within safe time limits. COS: Milk and dairy product were voluntarily discarded at the time of inspection. PIC instructed to remove duplicate date labels and ensure only the correct discard date is present moving forward.
