Observed several food items held for more than 24 hours, with no date mark labels or discard dates. A date marking system shall be used that is consistent within the facility and as long as all parameters set forth within 511-6-1.04 are met. PIC added labels at time of inspection.

Observed sanitizer buckets/wiping cloths not available for employee use in facility. PIC states she purchased some after last inspection and removed them from storage shelf to show me. Employees should be immediately retrained on proper sanitization of equipment, cleaning/sanitizing surfaces, and utensils and proper use and preparation of sanitizer buckets with wiping cloths. FACILITY MUST USE APPROPRIATE TEST STRIPS TO MONITOR SANITIZER in both 3 compartment sink and sanitizer buckets AND BE KNOWLEDGABLE ABOUT REQUIRED LEVELS.

Observed leak from 3 compartment sink. PIC was warned about this last inspection. A plumbing system shall be constructed and maintained or repaired if necessary, according to Code. PIC states she has yet to call a plumber but states she will immediately.
