Observed sanitizer buckets/wiping cloths not available for employee use in facility during lunch hour. Observed containers and equipment put away clean/drying on unclean surface with visible food debris. Observed pitted and stained cutting boards in need of resurfacing or replacement. Employees should be immediately retrained on proper sanitization of equipment, dishwashing protocols, proper storage of soiled and clean equipment and utensils and proper use and preparation of sanitizer buckets. PIC mixed proper sanitizer for buckets/wiping cloths during time of inspection.

Observed several food items with no date mark or dates improperly marked with "use by" date, (or blank stickers) in WIC. Employee states it was prepped yesterday or on the weekend and would likely be used today or first in the morning. All TCS (temperature controlled for safety) foods not used within 24 hours must be date marked according to the Code. PIC states staff will be retrained immediately on proper date marking procedures.

Observed cooler doors, rolling cart, counter sides, icemaker outer surfaces and other equipment all encrusted with food debris and in need of cleaning. Facility should develop a detailed cleaning schedule to ensure accumulation of buildup and ensure proper sanitation processes. Recommended hiring a professional cleaning company after hours as staff could not manage facility cleanliness. PIC states deep cleaning will be scheduled and completed immediately.

Observed buildup, encrusted food debris and accumulation of dust on floors and walls and ceilings. Facility should develop a regular cleaning schedule and re-train staff on proper cleaning. PIC states deep cleaning will be scheduled and completed immediately.

Observed dust and mold/mildew on A/C vents. Heating, ventilation and air conditioning systems shall be designed and installed so that make up air intake and exhaust vents do not cause contamination of food, food-contact surfaces, equipment, or utensils. PIC states vents will be cleaned immediately.
