Observed a metal tea pitcher full of sugar sitting on the counter uncovered and watched an employee open a package of fried shrimp to cook and breader from the shrimp fell into the container of sugar. Food shall be protected from overhead contamination.

Observed a stack of plastic containers in the dishwashing area stacked wet. Equipment, utensils shall be allowed to air-dry before stacking on dish/utensil shelves.

Observed outdoor garbage enclosure not in use. Observed garbage dumpster in back of parking lot area with both lids left open. Recommend moving dumpster back to enclosure as soon as possible and lids shall remain closed at all times to prevent insect/rodent intrusion.

Observed a wash cloth and rubber gloves left lying on the floor of chicken prep/dishwashing area. Observed floors in kitchen unclean and also floors inside walk-in cooler area. Physical facilities shall be cleaned as often as necessary to prevent buildup.

Observed stainless steel pans wet stacked after washing. After cleaning and sanitizing, equipment/utensils shall be allowed to air dry before contact with food items.

Observed equipment/utensils on the washed dish shelving unit that had been previously washed and were still soiled or still had food accumulations present. All items, after washing, shall be free of accumulations of food particles. Also observed food debris present on the "PrinceCastle" warmer drawer by the drive thru window that appeared to be from the prior day due to the fact no cooking had been done at the time of this inspection. Equipment shall be free of accumulations and food debris and clean to sight and touch.
