Observed numerous containers of chicken salad in 2-door glass cooler in main kitchen not cooled to 41 degrees Fahrenheit within 4 hours of prep (out of temp control). COS: PIC marked containers as "do not serve" to be discarded after inspection.

Observed numerous pans of prepped chicken salad and shredded chicken waiting to be prepped in Walk-in-cooler being cooled by ineffective method - stacked and tightly covered and not monitored. COS: PIC had employee move containers so lids could be removed for rapid cooling. Start times were ~2:00pm - all containers shall be 41 degrees Fahrenheit by 6:00pm. Monitor with thermometer and discard containers if this criteria is not met.
