Assorted seasonings, prepped items, rice, sugar, and various food products found stored throughout the kitchen uncovered and subject to contamination. CA: Unless cooling, ensure food is covered. COS: Items were covered.
6-2 - proper date marking and disposition

Observed TCS (Time/Temperature Control for Safety) foods(multiple containers of cooked chicken, pasta, cut tomatoes) prepared on site and held more than 24 hours with not properly date marked in main kitchen and walk in cooler. CA: TCS food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. COS: Recently prepared items were date marked; other items were discarded.
