Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
- Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit (sausage & ranch) in reach in cooler on front porch.
- CTM, replace seal on reach in cooler on front porch to ensure cooler will maintain temperature at 41 degrees Fahrenheit or below. Must be done within 72 hours. If seal is replaced and cooler still will not maintain temperature at 41 degrees Fahrenheit or below, new commercial refrigerator will be required. Food placed on ice until cooler can be repaired. Email Brooke at brooke.pearson@dph.ga.gov when seal is replaced.
