4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed low temp sanitizing dishmachine with chlorine concentration of 0ppm. Advised PIC that concentration at greater than 120F must be between 25 and 100ppm. PIC removed the dishmachine from service until a repair can be made and proper concentration can be maintained.
