Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed the inside of the microwave oven and the mixer with dried food accumulation buildup. CA: All food contact surfaces shall be kept cleaned to prevent buildup of food accumulation. CO: PIC had these items corrected on site
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed wet wiping cloths not being stored in sanitizer while not in use. CA: Wet wiping cloths shall be stored in sanitizer between uses. Co: PIC had all new cloths placed in sanitizer.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed nonfood contact surfaces with grease/dust buildup ie: shelves above grill and floors in walk-in cooler. CA: Nonfood contact surfaces shall be cleaned at a frequency to prevent accumulation/buildup. COS: PIC had these items corrected on site.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(f) - drying mops (c)
Observed wet mops being stored with wet heads on the floor. CA: After use, mops shall be placed in position that allows them to air dry. COS: PIC had the mops corrected on site.
