Observed improper vertical and horizontal separation of ready-to-eat foods and raw meats in walk-in cooler and coolers in prep area. Observed raw chicken stored above lemons, vegetables. lettuce. Observed raw chicken stored directly next to oranges and bin containing onions, apples. Observed raw shell eggs stored directly next to lemons and precooked chicken & vegetables in front cooler. Facility must follow storage order chart.
4-2B - food-contact surfaces: cleaned & sanitized

Observed heavy pink slime buildup on deflector shield inside ice machine.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed several damp wiping clothes on countertops throughout kitchen. Cloths must be returned to sanitizer after use.
