Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed items without date marking. Observed opened/prepared items held past 7 days. Expired items discarded.
15C - nonfood-contact surfaces clean
Observed food debris inside coolers/warmers throughout kitchen. Observed stained cooler/warmer gaskets throughout kitchen in need of cleaning and/or replacing. Food bins inside walk-in coolers should be cleaned/sanitized regularly. New food items should not be placed in old bins prior to washing & sanitizing.
