6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several opened and/or prepared items in walk-in cooler without date mark. Observed crab mix dated 12/20 in upstairs cooler. Observed bowl of condensed milk in walk-in dated 12/18. All items held longer than 24 hours must be dated. Old items must be discarded.
