Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Multiple containers of food in coolers not stored covered. Advised PIC to cover. Food shall be stored covered to protect from overhead contamination.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Large amount of black slime mold in interior of ice machine. Advised PIC to empty and clean with sanitizer. Equipment food contact surfaces shall be clean to sight and touch.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Multiple RTE food (meatloaf, mashed potatoes, rice, corn soup, etc.) stored in cooler with no date. Advised PIC to label with made date or use by date. RTE food held in an establishment for more than 24 hours shall be clearly marked to indicate the day the food was prepared or the 7-day discard date when it shall be discarded.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(2)(i) - light bulbs, protective shielding (c)
Light shield broken on light in kitchen. Advised PIC to fix or replace. Light bulbs shall be shielded, coated, or otherwise shatter resistant in areas of exposed food, clean equipment, utensil or linens, or unwrapped ss items.
