Employee drink (coffee) with no straw sitting in food area. Advised PIC to put in straw and relocate. Employee drinks shall have a lid and straw so that it is handled to prevent contamination of the employees hands, the container, exposed food, clean equipment, utensils and linens, unwrapped ss items and shall be stored in designated area away from food and food prep area. Most all coolers/freezers dirty <doors, handles, inside bottom, wire racks holding pans of food> Shelf above chicken prep area holding flour and equipment very dirty with build up. Shelves holding ss items, boxes, plastic containers dirty. Advised PIC to clean. Non-food contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other materials.
