Observed diced pork and other pizza toppings in front reach-in cooler stored uncovered. Food stored shall be covered to prevent contamination. Employee covered the items.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed several foods stored past the discard date. Walnuts 3/24/26, cranberries 3/24/26, Lasagna 3/21/26, Salami 3/24/26, and Strip Bacon 3/17/26. Employee threw all food out. Spoke with employees about practicing first in, first out rule.
10D - food properly labeled; original container

Observed storage container of white cornmeal not labeled. Observed salt in a storage container labeled Hot Dog Chili with a prep date of 2/6. Foods removed from its original container shall be labeled with that food most common name.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.05(10)(b) - wiping cloths, air drying location (c)
Observed soiled wiping cloths hanging on veggie sink. Wiping clothes are to be stored in sanitizing solution when not in use or stored in a soiled basket when no longer in use. Manager removed soiled cloths.
