Observed the hand sinks in the restroom and the main kitchen without any hand drying towels. All hand wash sinks shall be supplied with soap, water, and drying towels to ensure proper handwashing.
11D - thermometers provided and accurate
Regulation: 511-6-1.05((2)(l) - tmd, ambient air & water - accuracy (pf)
Observed no thermometer in the RIC. All storage for cold holding shall have accurate and easily accessible thermometers
12A - contamination prevented during food preparation, storage, display

Observed phones, air pods, and incense sticks on the prep top table. Personal items and miscellaneous items shall be stored in designated areas away from food prep and storage areas.

Observed staff in food prep area without hair restraints. Hair restraints are required to help prevent contamination of food.
12C - wiping cloths: properly used and stored

Observed wet wiping cloth not stored in sanitizing solution between uses.

Observed residue of grease build up on nonfood-contact surfaces. Clean at a frequency to prevent build up.

Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of grease and debris under the cook/fry line. Observed accumulation of debris at the front counter ordering area. Clean at a frequency to prevent accumulations.
