CODE: "Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM)."
CA: SOMEONE ON STAFF MUST OBTAIN A CFSM CERTIFICATION OR PIC MUST HIRE SOMEONE WITH SAID CERTIFICATION ASAP. WILL ALLOW 1 MONTHS FOR SCHEDULING AND TESTING AND RECHECK FOR COMPLIANCE.

OBSERVED: NO EMPLOYEE HEALTH DOCUMENTS OR ACKONWLEDGEMENT OF FOOD HANDLER STAFF'S RESPONSIBILITY TO REPORT DISEASES TRANSMISSIBLE THROUGH FOOD. CA: PIC WILL ENSURE ALL CURRENT AND FUTURE EMPLOYEE'S READ AND SIGN AN EMPLOYEE HEALTH AGREEMENT SUCH AS THE GA DPH RED BOOK. CB: PIC HAS ONE WEEK TO ENSURE ALL EMPLOYEES HAVE A SIGNED EMPLOYEE HEALTH POLICY IN PLACE.

OBSERVED MICROWAVES ROOF WITH EXCESS SOIL ACCUMULATION AND NOT CLEAN TO SITE AND TOUCH. CA: PIC WILL HAVE MICROWAVES ROOF AND EQUIPMENT CLEANED TO SITE AND TOUCH. CB: PIC WILL HAVE ONE WEEK TO ENSURE EQUIPMENT IS CLEANED TO SITE AND TOUCH.

OBSERVED TWO REACH IN COOLERS AND THE WALK IN COOLER OUT OF GOOD REPIAR. PIC INFORMED ME UPON ARRIVAL THAT THEY ARE NOT IN USE CURRENTLY. CA: EQUIPMENT SHALL BE MAINTAINED IN A STATE OF GOOD REPAIR. DOORS, GASKETS, COOLERS, ALL MUST BE KEPT IN GOOD REPAIR IN ACCORDANCE TO MANUFACTURER'S SPECIFICATIONS. CB: PIC WILL HAVE ONE MONTH TO ENSURE ALL EQUIPMENT IN PROPERLY REPAIRED AND ADJUSTED.

CA: PIC WILL CLEAN NON FOOD CONTACT SURFACES (HANDLES OF REACH IN COOLERS & OTHER EQUIPMENT) TO ENSURE THEY ARE CLEAN OF EXCESS ACCUMULATION OF SOIL RESIDUE. CB: PIC WILL HAVE ON WEEK TO MAINTAIN A CLEANING FREQUENCY NECESSARY TO ELIMINATE ACCUMULATION OF SOIL RESIDUE ON NON FOOD CONTACT SURFACES OF EQUIPMENT/COOLERS.
