Observed two employee drinks stored on bottom of prep table in disposable cups, but covered with plastic wrap. CA: Employee drinks must be in disposable lid and straw. COS: PIC discarded drinks.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Sanitizer bucket in kitchen and in 3-compartment not in active use @ 0ppm. PIC instructed sanitizer must be between 150-300ppm. Bucket and 3-compartent remade to 300ppm. Recommend service tech look at lines if problem with dispensor continues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Emergency food & water supply stored in outdoor sheds with concrete floors and wooden walls and ceilings that are not smooth and easily cleanable. Shed must be fitted with correct FWC or emergency supply moved.
