6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed out of temperature tomatoes and vegetables in prep cooler near grill. Temperatures ranged from 56F to 67F. Out of temperature items must be disposed. Advised PIC to cease use of cooler and use another cooler prep until cooler is properly repaired. Cold held items must be held at a temperature of 41F or lower.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(i) - storage or display of food in contact with water or ice (c)
Observed heavy ice buildup on all food items in walk in freezer. Dispose any potentially contaminated food items and defrost freezer.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed exposed raw concrete floors in walk in cooler. Floors must be maintained non-absorbent and easily cleanable. Re-seal floors.
