Observed RIC in prep area not holding temperatures under 49F. CA: Get unit repaired before storing TCS foods in RIC. COS: Manager discarded all TCS foods in cooler.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed multiple food items stored throughout the facility uncovered. CA: All food must be covered to prevent contamination.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple items with no dating/labeling throughout the facility. CA: Date/label all foods out of original packaging. COS: Manager placed dates and labels on containers of food.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Observed fish in reduced oxygen packaging being thawed in the reduced oxygen packaging. CA: Food was thrown out and restaurant was advised to thawed food out of ROP.
12A - contamination prevented during food preparation, storage, display

Observed raw eggs being stored over RTE foods. CA: Store raw eggs below all RTE foods to prevent contamination. COS: Manager moved eggs to bottom shelf.
