6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
INSPECTOR OBSERVED THAT THE REACH-IN DOUBLE GLASS DOOR COOLER IN THE MAIN KITCHEN AREA WAS NOT MAINTAINING PROPER COLD HOLDING TEMPERATURES. THE ITEMS WITHIN WERE TEMPED BETWEEN 56-60F, WHICH IS ABOVE THE REQUIRED 41F OR LOWER. PIC MOVED SALVAGABLE ITEMS TO ANOTHER COOLER TO BRING THEM INTO THE REQUIRED TEMPERATURE RANGE, AND NON-TCS ITEMS WERE LEFT, AS TEMPERATURE IS A QUALITY ISSUE FOR THEM. REPAIR OR REPLACE COOLER WITHIN 10 DAYS TO MAINTAIN PROPER FOOD SERVICE OPERATIONS.
