6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed eggs out at room temperature. Eggs placed back in RIC. Let them know to keep eggs in RIC so that they stay in temperature. TCS cold hold foods must be kept @ 41F or below.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed no datemarking if food is not used within 24hrs. Chorizo cooked Monday had no datemarking. Items must be datemarked to be used within 7 days, with day 1 being day item was opened/ prepared.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Back door is not self-closing. Fix so that it is self-closing.
