6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several items in RIC and WIC out of temperature. Observed meat at room temperature. RIC raw beef @ 44F and raw chicken @ 45F. Get WIC fixed immediately. Observed several to-go containers with noodles in PTC at 45F. Observed pre-cooked spring rolls at room temperature. Let PIC know that they can be pre-cooked, but they have to be stored in RIC afterwards. Discarded.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(a) - food safety manager certification (pf)
CFSM expired. 30 days to get CFSM.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Did not see any datemarking on anything within facility. Asked PIC to start datemarking everything if it is not used within 24hrs. PIC understands.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of grease on hood. PIC states she has someone coming to clean hood system. Keep floors and equipment clean.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed ceiling with air filters visible. PIC states she put them there to not get ceiling tiles dirty. Let her know that it is not material that is easily cleanable, smooth, or non-absorbent. PIC states that she will remove. Make sure to clean ceiling tiles and air vents frequently. Clean WIC air vents as well.
