Observed slacked RTE TCS food (eggs) in the malfunctioning reach-in freezer past the 7-day discard date. CA: RTE TCS foods held more than 24 hours must be clearly date marked and discarded within 7 days at 41°F or below. COS: Food voluntarily discarded.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed mop sink leaking at the faucet connection. CA: Plumbing systems must be maintained in good repair. COS: PIC stated repair will be scheduled.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed reach-in freezer not maintaining foods in a frozen state. Food temperatures ranged between 31°F–33°F and items were not hard frozen. CA: Equipment must be maintained in good repair and operate according to manufacturer specifications. Freezers must maintain foods in a frozen state.
