14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed ice cream scoops and other knives and utensils stored in containers of room temperature water between uses. Observed ice scoop stored with handle in product and scoop in sugar bin with handle in product. In-use utensils can be stored in food with handles above the product, in containers of non-TCS foods with the handles above the product, on a clean area that is cleaned and sanitized at least every 4 hours and utensils cleaned and sanitized at least every 4 hours, or in running water if used with moist foods such as ice cream, or in a container of water that is 135 F or above. PIC replaced utensils and will research the best way to store the utensils for her facility.
