High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed bottles of milk on front counter at 50-58°F. Operator was not using time as a public health control. Discussed with operator and advised to hold milk in reach in cooler, in ice bath or use time instead of temperature. Operator placed bottles of milk on ice bath. Corrective Action Taken. Observed carrot cake in reach in cooler at front counter at 65°F, operator stated unit was left open during cleaning procedures,second temperature check at 11:00-63° F. Observed ambient air temperature at 56-57 on front and back end. Walk in cooler-Sliced cooked ham, sliced cooked turkey breast, tuna salad, cooked sliced chicken, crumbled feta cheese, pancake batter with milk-45-58. All cooked/prepped on a previous day. Warning - From follow-up inspection 2021-09-22: Reach in cooler at front counter- carrot cake, and cheese cake at 50°F-53°F. Walk in cooler-Sliced cooked ham, sliced cooked turkey breast, tuna salad, crumbled feta cheese, cheddar cheese, provolone cheese, chicken broth, raw salmon fillet, raw tuna fillet-48-55°F, all TCS food were stored in the walk in cooler overnight. Per operator, the technician was not able to complete repairs as the plaza management requires the technician to have an insurance policy. Warning Admin Complaint
