Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed a written plan for time as a public health control, however, operator didn't have sliced tomatoes, ham or mayonnaise on the written plan. All necessary step were taken to keep items for up to 4 hours including time stamps. Operator added the items to the written plan. Corrected On-Site
