Observed operator entered into the kitchen to begin his shift,began to engage in preparing customer order without first washing hands. Educated operator on proper handwashing procedures. Operator washed hands and put on new pair of gloves. Corrected On-Site

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at hot holding cheese unit - melted nacho cheese (123F - Hot Holding). Operator shut down machine until repaired. Corrective Action Taken
