High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw beef carpaccio stored over uncovered pan of cut lettuce in low drawers at pizza station. Manager removed lettuce from cooler. Corrected On-Site Repeat Violation Admin Complaint

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Several mini mozzarella cheese logs stored atop bucket of mozzarella cheese in flip top cooler at pizza station at 61 F. Per operator, foods not prepped or portioned today, food held in walk in cooler and placed in flip top cooler and held for approximately two hours. Advised manager to move food back to other cooler to quick chill. Corrective Action Taken Repeat Violation Admin Complaint
