Basic - Old food stuck to clean dishware/utensils. Observed raspberry or strawberry like substance snide a bottle at bar, put away clean.

Basic - Old labels stuck to food containers after cleaning. Observed old labels on 3 bottles at bar, put away clean.

Basic - Equipment and utensils not properly air-dried - wet nesting. Observed cambro stacked wet nesting on dry rack. Observed operator remove, rehash, rinse and sanitize containers. Corrected On-Site

Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed on inside top of microwave, dried food debris. Observed operator cleaning microwave properly. Corrected On-Site

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed front of house reach in cooler with food debris on gaskets. Observed operator cleaning gaskets completely. Corrected On-Site

Basic - Old labels stuck to food containers after cleaning. Observed a cambro with old label on it, put away clean. Observed operator remove label, wash, rinse and sanitize container. Corrected On-Site

Basic - Cleaned and sanitized equipment or utensils not properly stored. Observed steam pan underneath clean storage rack on floor. Observed operator remove and put in dish rack for dish machine washing Corrected On-Site

Basic - Objectionable odors in bathroom or other areas of the establishment. Observed floor mats rolled up and standing in up right position with objectionable odor coming from them as soon as you step off elevator into dish area. Observed operator contacting housekeeping to re clean and dry mats properly. Corrective Action Taken

Basic - Plumbing system in disrepair. Observed at three compartment sink in dish area a bus tub underneath a pipe collecting water that is leaking from pipe. Observed operator putting in a repair order. Corrective Action Taken

Basic - Cutting board has cut marks and is no longer cleanable. Observed cutting boards with grooves in them

Basic - Wet mop not stored in a manner to allow the mop to dry. Observed wet mop stored inside mop bucket. Not properly hung up to dry
