Observed sliced cheese (52F - Cold Holding); cooked beef brisket (48F - Cold Holding); raw ground beef (46F - Cold Holding) in reach in cooler #4. The operator provided a temperature log showing temperatures less than 40F taken at 12:00. The operator moved the above foods to the walk in cooler. Corrective Action Taken Warning
