High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed (47F - Cold Holding); cooked philly meat (48F - Cold Holding) on the front sandwich make line. The operator stated the above potentially hazardous foods had been restocked within the hour. The operator removed the top layer of portions and placed in a separate cold holding unit. Corrective Action Taken

Basic - Wet mop not stored in a manner to allow the mop to dry near the entrance to the kitchen. The operator properly stored the wet mop. Corrected On-Site

Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed the wiping cloth quaternary solution for the sanitizer near the hand sink on behind the front counter. At 0ppm. The operator replaced the sanitizer with a quaternary solution of 200ppm. Corrected On-Site
