High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Rice in walk in cooler at 47F. Per operator, rice had been at room temperature for a few minutes to prepare customer's orders. Rice placed in walk in freezer and 15 minutes later, rice temperature is 40F. High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Wiping cloth solution near sushi area tested at 200+ppm chlorine. Operator remade solution to 100ppm. Corrected On-Site
