High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In cookline reach in cooler, sausage (56F - Cold Holding); cheese (54F - Cold Holding); cream cheese (51F - Cold Holding); egg patty (46F - Cold Holding). Ambient air of cooler 37F, per operator observed cooler freezing over and turned off with product inside approximately 1 hour before hand. Operator removed all time/temperature control food for safety to walk in freezer and replaced with items from walk in cooler. At conclusion of inspection only sausage and cheese still above temperature range. Corrective Action Taken
