Basic - Time/temperature control for safety food packaged using a reduced oxygen method without a HACCP plan not properly labeled with the production time and date. Observed cooked mushrooms and cooked peppers vacuum sealed in jars not properly labeled. Educated operator on proper vacuum labeling and vacuum sealing. Operator decided not lo longer vacuum seal and opened product before the time limit. Corrected On-Site
