Basic - Grease on the ground and/or pad around grease receptacle. Observed buckets of grease/ oil stored around shared grease receptacle area. Also, trash on ground outside of shared compactor.

Basic - Old labels stuck to food containers after cleaning. Old label residue and several old labels observed on clean dish ware.

Basic - Wet mop not stored in a manner to allow the mop to dry. Wet mops stored in mop sink. Person in charge removed. Corrected On-Site

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Deli meat, cheese at 47-51F in reach in cooler on line. Items stored above fill line. Person in charge removed excess and placed in unit holding temperature. Corrective Action Taken

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Au jus in warmer at 123F. Warmer has open spaces allowing heat to escape. Person in charge began reheating, covered open spaces in warmer. Person in charge reheated to 172F. Corrected On-Site

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Exterior of soda dispenser plate in dining room with debris buildup. Front of low boy reach in coolers on make line and in back kitchen with debris buildup.

Basic - Outer openings not protected with self-closing doors. Self closer missing from back door.
