FIREHOUSE SUBS

High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Upon inspection observed operator checking customer in register and not wash his hands before changing gloves in make line. Operator proceeded to wash hands after addressing action during inspection. Corrected On-Site

Basic - Wet wiping cloth not stored in sanitizing solution between uses. Upon inspection observed 2 sanitizing cloths on cutting board on make line in kitchen.

Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Upon inspection observed mold like substance inside ice machine in back of kitchen.

Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Upon inspection observed air conditioning vents soiled with dust in dining area.

Basic - Wet mop not stored in a manner to allow the mop to dry. Upon inspection observed mops still in mop bucket not properly hung to dry by mop sink.
