Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.

Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Upon inspection observed ice buildup inside reach in freezer in kitchen.

Basic - Stored food not covered. Upon inspection observed food stored inside walk-in cooler not protected or covered.

High Priority - Raw animal food stored in top portion of make table over ready-to-eat food in bottom portion of make table - no complete physical barrier between top and bottom. Upon inspection observed raw chicken, and steak stored over cooked chicken in walk-in cooler. Operator proceeded to move the cooked chicken over a different shelf. Corrected On-Site

High Priority - Toxic substance/chemical improperly stored. Upon inspection observed 2 chemical bottles on top of 3 compartment sink while chicken was inside the sink.

Basic - Wet mop not stored in a manner to allow the mop to dry. Upon inspection observed mop not properly stored for drying by mop sink.

High Priority - Nonfood-grade bags used in direct contact with food. Upon inspection observed raw cut beef stored in retail bag on second shelf left side in walk in cooler.

High Priority - Toxic substance/chemical improperly stored. Upon inspection observed Ajax dish washing liquid and WD40 stored in bottom shelf of prep table next to vinegar and canned vegetables. Operator removed chemicals during inspection. Corrected On-Site

Intermediate - Food-contact surface soiled with food debris or mold-like substance. Upon inspection observed food debris in wire racks in walk in cooler.

Intermediate - Handwash sink not accessible for employee use at all times. Upon inspection observed metal scoop stored in hand washing sink basin next to 3 compartment sink. Operator removed scoop during inspection. Corrected On-Site

Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.

Basic - Bowl or other container with no handle used to dispense food. Upon inspection observed small bowl resting in salt/sugar mixture in back of kitchen. Operator corrected storage during inspection. Corrected On-Site

Basic - Employee with no hair restraint while engaging in food preparation. Associate in cook line area without hair restraint.

Basic - Storage of maintenance equipment/tools in areas that may result in cross contamination of food, equipment, utensils, linens and/or single-service and single-use articles. Upon inspection observed cooked chicken in containers resting on top of folded ladder in back of kitchen.

Intermediate - Handwash sink used for purposes other than handwashing. Hand washing sink in between reach in freezer and reach in cooler has a bowl stored in it. Owner removed bowl from hand washing sink. Corrected On-Site
