High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. DM sanitizer initially showing no reading on establishment and inspector test strips. Manager stated work order was input prior to inspector arrival. Backup dish ware sanitizing set up at triple sink. Corrective Action Taken

Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Dust buildup on vent over dish-machine area.

Basic - Food stored on floor. Several boxes of food stored on floor in walk in freezer. Employee properly stowed items during inspection. Corrected On-Site

Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Side walls of ice machine

Basic - Accumulation of debris on exterior of warewashing machine. Top of dish machine soiled

Basic - Equipment and utensils not properly air-dried - wet nesting. Pans on shelf by dish machine.
