High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed 3 compartment sink sanitizer at 100ppm. Checked new fill of sanitizer bucket from automated system, 300ppm. Operator discard the sanitizer solution and re-sanitized dishes in the sanitizer solution and dishes on the drain board. Recommended to manager to check sanitizer strength more frequently.
