High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tuna that was temperature of 49°F and chicken temperature of 52°F. Operator removed the chicken and tuna that he said was there for 30 minutes and put them in the walk-in cooler to chill quickly. I took temperature of tuna after 20 minutes and was at 45°F and chicken was at 47°F. Corrective Action Taken
