High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced cheese (48°F - Cold Holding); Guacamole (49°F - Cold Holding). Per operator, food had just been transferred to cooler from reach in cooler. Operator adjusted the thermostat to lower temperature. Corrective Action Taken

Educated operator on proper holding temperature and gave Time As A Public Health Control. Operator voluntarily threw out product. . Corrected On-Site
