High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Sanitizer level at 0 ppm for quaternary. Operator replaced empty bag with new one. Sanitizer level now reads 300 ppm. Corrected On-Site

High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken wings inside heated holding drawer at 97F at approximately 2 hours per Operator. Operator increased drawer temperature to reheat. At 2 hours 20 minutes wings were at 125F and rising. Corrective Action Taken
