High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed cook preparing food changed soiled gloves and put on clean gloves and failed to wash hands. Stopped cook and explained proper protocol for Handwashing and glove use. Cook removed soiled gloves,washed hands and put on clean gloves. Corrected On-Site

Basic - Employee with no beard guard/restraint while engaging in food preparation. Observed no beard guard on 2 employees preparing food. Stopped employee's and explained proper protocol for hair restraint. Employee's put on beard guard and washed hands. Corrected On-Site

Basic - Employee with no hair restraint while engaging in food preparation. Observed 2 employees no hair restraint preparing food. Stopped employee's and explained proper protocol for hair restraint. Both employee's put on a hat and washed hands. Corrected On-Site

Basic - Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting on glasses in bar area next to fountain beverage machine. Manager removed glasses. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. Corrected On-Site Repeat Violation

Basic - Floor tiles missing and/or in disrepair. Observed 8 missing/ broken tiles in dishwasher area. Observed 4 missing/ broken tiles on cooks line.
