High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Reach in by Pizza oven: sliced sausage (53F - Cold Holding) Per operator, not prepared or portioned today. Per operator, out of temperature for 2 hours. Observed gaps between pans on top portion of reach in cooler where sausage was stored allowing cold air to escape. Operator placed sausage in bottom portion of reach in cooler.
