Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed ahi tuna steaks still in ROP packaging defrosting in container in ambient temperature, STILL FROZEN. Coached operator on proper ROP defrosting methods. Operator took ahi out of ROP packaging and placed inside walk in cooler. Corrected On-Site
