As per manager, food was placed in reach in cooler at the front line less than 1 hour ago. Employee placed pasta inside the walk in cooler. Corrective Action Taken

Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed an employee wearing a watch while engaged in food preparation. Employee removed it. Corrected On-Site

Basic - Garbage can located outside has no lid or lid open/broken. Observed dumpster missing one lid.

Basic - Accumulation of debris inside warewashing machine.

Basic - Missing drain plug at dumpster.

Basic - Walk in cooler interior/shelves have accumulation of soil residues. During the inspection employee cleaned it. Corrected On-Site

Basic - Waste line missing at soda gun holster, located at bar.

High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Observed three compartment sink at bar area (Quaternary 400plus ppm). Employee diluted solution with the final reading of 100ppm. Corrected On-Site

Basic - Equipment and utensils not properly air-dried - wet nesting. Observed metal pans on drying rack wet nesting. Manager separated, containers to air dry properly. Corrective Action Taken

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed walk in cooler fan covers soiled.

Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed oven located at preparation station interior soil.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In ice bath observed cheese (47F - Cold Holding), as per manager for less than 4 hours, employee added ice to the rim to rapidly cool down. Corrective Action Taken
