Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dishwasher (Quaternary 0 ppm). Observed the sanitizer container empty. Operator set up the three three compartment sink with chlorine. Corrective Action Taken

Observed the establishment offer ceviche with raw fish (corvina/grouper) not parasites destruction letter was provided. As per operator the ceviche is not serving at the moment. Repeat Violation
